Midnight Moon Chocolate Cake

Ingredients
  

  • 2 cups Cake flour or all-purpose flour 240g
  • 1 1/2 cups Granulated Sugar 300 g
  • 1/2 cup Brown sugar 110 g
  • 3/4 cu[p Cocoa Powder (unsweetened) 64 g
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup vegetable oil
  • 1 cup milk or heavy cream
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup hot water

Instructions
 

  • Sprinkle a bit of magic into your cauldron (or mixing bowl) by adding the flour, sugar, cocoa, baking powder, baking soda, salt, and a dash of espresso powder. Grab your enchanted whisk (or paddle attachment) and swirl everything together until the ingredients are perfectly combined.
  • Next, pour in the potion ingredients: milk, vegetable oil, eggs, and a splash of vanilla. Stir on medium speed until the spell is fully cast and everything is beautifully blended. Lower the speed, and with a steady hand, carefully pour in the bubbling boiling water. Stir until the batter is as smooth as a midnight sky.
  • Now, divide your enchanted chocolate potion evenly between the well greased cake pans. Place them in your oven (preheated, of course) and let them bake for 30-35 minutes, until a wand (or toothpick) inserted in the center comes out clean.
  • When the cakes are done, remove them from the oven and allow them to rest before gently lifting them from their pans. Let them cool completely, ready to be transformed into a magical treat! I added caramel on top of mine when they were done, as well as some sugar sprinkles!
